Blini

A blini is a Russian pancake. The word blini literally means pancake. Blinis are made with buckwheat flour and served with sour cream, butter or caviar. Other garnishes like meat, fish, mushrooms, just about anything can be used.
Blini was historically eaten during the week of the sun festival. The round pancakes supposedly resemble the sun. Now blinis are eaten throughout the year. The blini has been in existence for over a thousand years now.
Blintzes are a type of blini. They wheat-flour pancakes that are thin and folded in to form a casing with fruit or cheese stuffed inside. This is then sauteed or baked.
