Erudite Epicure

Karelian are pastries or pies from Finland and named after the region of Karelia. These traditional pastries have a rye crust and made with wheat to improve the baking characteristics. These pastries are filled with barley. The first fillings in the 19 Century were potato and buckwheat, now rice, carrot, eggs, and millet are also used.
Versions of this are available in Russia and Sweden as well.
