Dublin Coddle

This is an Irish supper favourite dating all the way back to the 18th century . It is a stew made of potatoes, sausages, bacon, onions and leftovers. The word coddle comes from the older word caudle, derived from a French word meaning "to boil gently, parboil, or stew".
