Pigs are considered to be lucky. What with them being rotund and always moving ahead
despite all the nasty things life brings them. So in Southern America, they bring in the new
year with a dish called Hoppin’ John. Pork, beans and greens make a Hoppin’ John.
Black-eyed beans, chopped onions, bacon slices and salt for seasoning are mixed together to
make the dish.
In Cuba, a Hoppin’ Juan is the same dish with black beans instead of black-eyed beans (yes,
those are not the same.)
