Meet Chef Alessandro Bechini

Chef Alessandro Bechini is the new Italian Chef at Sheraton Grand Bangalore Hotel at Brigade Gateway. To taste his dishes head over to Bene for a true Italian feast. In conversation with Explocity.

 

Where did you grow up?

In Tuscany, Italy. There is a place between Florence and Pisa called, “Valdinievole”.

 

Do you have any New Year resolutions?

I’m not good at keeping resolutions hence I don’t make any!

 

What led you to becoming a chef?

Curiosity. From a very young age, I’ve been very curious about all that is happening in and around the house. I was an attentive kid and helped my mother and grandmother around the house.  

 

How long have you been a chef?

I started off in a local restaurant closer to my home as a dishwasher. This was in 1980 when I was 15 years old. I worked on Saturday evenings and Sundays for lunch.

 

What do you enjoy more? Cooking or creating?

Both have its own charm; in a way it’s connected to each other. I prefer both. If I have to choose one, cooking it is.

 

Do you feel there is virtue in preserving the authenticity of cuisine?

Yes, absolutely. But when we work abroad, we often need to compromise. This is usually because we can’t source original ingredients.

 

What dish do you like eating the most?

I’m not just an Italian by birth but also love indulging in true Italian dishes such as Pizza, Pasta, Gelato, and all kinds of meat, seafood and vegetables. As well as rapidly and simply grilled, Mediterranean way, extra virgin olive oil is a must.

 

What’s your least favourite dish?

There is no such dish, which I could call least favorite.

 

How long have you been in Bangalore?

Since November 1st2017. I have just moved in, it’s been a little over two months.

 

Do you like it here?

Yes, I like the greenery and the weather feels like home.
