We all know the four Classical French sauces: Béchamel, Velouté, Espagnole and Hollandaise. There are the derived sauces too. But this is not about the French Classical cuisine. The French have given us a lot of other delicacies, like the Remoulade.
The Remoulade is an aioli or mayonnaise based sauce. The sauce is like a tartar, it gets its kick from the addition of anchovies, paprika and capers. Which is what makes it a good condiment with French Fries, Roast Beef and even served with Hot Dogs.
The sauce is a hot favourite in Creole cuisine.
