There is a Chinese dish called Mayishangshu or more simply, Ants Climbing A Tree. This is a dish from the Sichuan province that is basically ground meat, usually pork that is cooked in a sauce and served over thread noodles. The dish is so called because the pork bits cling to the noodles and resemble ants that would be climbing a tree.

This is one of those dishes that more than a variation in the recipe has variations in the name. It is also called “ants climbing a log”, “ants climbing a hill”, “ants creeping up a tree”, basically anything to do with ants moving upwards on anything. The recipe, however, has few variations where the sauce is made with vinegar, soy sauce, vegetable oil, sesame oil, scallions, ginger, garlic and chilli paste.
With Chinese cooking it’s easy to add all the ingredients one by one to then cook together in a wok. That’s for the sauce.
For the noodles, they can be soft or deep fried to give the dish a crunch. Top with sauce and serve.
