Osama Jalali, known for his work in heritage Indian cuisine, brings his ‘Lost Recipes of India’ to Bangalore. This showcase revives dishes once served in royal courts and traditional home kitchens, offering diners a taste of India’s culinary past.

A food historian and researcher, Jalali has spent years gathering heirloom recipes from across the country. The menu features dishes like Dahi ke Long Chide, yogurt-marinated kebabs grilled to perfection, and Murgh Chargha, a deep-flavored specialty from Lahore. Other highlights include Zafrani Paneer Qaliya, a saffron-infused cottage cheese dish, and Chole Murgh, a rare combination of chickpeas and chicken. The meal culminates with Nihari, slow-cooked overnight with hand-pounded spices, and Qimami Seviyan, a caramelised vermicelli dessert.

Designed for Ramzan and Eid celebrations, the pop-up brings together slow-cooked delicacies and indulgent desserts in an experience that honours tradition.

Hilton Embassy Golflinks

Celebrate Ramadan with a feast that brings together flavors from across the country. The menu honours tradition and community, offering a rich selection of specialties to mark the occasion like Sarbat-e-Khaas and Malika-e-Sarbat, Murgh Tillnaaz Tikka, Bharwan Kumbh, Gosht Gilafi Seekh, and Mewe Mawe ki Seekh. The main course features dishes like Era Triplican Biryani, Nalli Nihari, and Sahi Haleem.

The meal concludes with Sheer Korma, symbolizing new beginnings, along with favorites like Pakiza and Sahi Tukra.

Curated by Executive Chef Hitesh Pant and his team, the buffet features succulent kebabs from live grills and slow-cooked Mandi, a fragrant rice dish with spice-infused meat. The menu also includes a selection of Arabic and Levantine specialties, offering a taste of the Middle East.

To conclude the meal, guests can indulge in Arabic desserts such as baklava and kunafa. Designed for gathering with family and friends, this Iftar experience blends tradition with a carefully crafted culinary spread.
