Meet Chef Amit Tapliyal. Chef Amit is the head chef at Hyatt on MG Road. Having just moved to Bangalore, he describes the city as “flamboyant yet subtle.”
Where did you grow up?
Delhi.
What led you to becoming a chef?
My mom always advised me to be on my own , hence I learned basic cooking from her. This started as a necessity and turned out to be my passion now.
How long have you been a chef?
Since 2002.
What do you enjoy more? Cooking or creating?
Innovating (creating) new dishes.
Do you think there is any virtue in preserving the authenticity of a cuisine?
The world is going gaga over fusion food however the I personally prefer authenticity it gives you real taste of the particular cuisine.
What dish do you like eating the most?
Simple home style food prepared by my mom.
What’s your least favourite dish?
As a chef any dish can’t be bad or least preferred. Still if I have to choose it will be Baigan Ka Bharta cooked in charcoal.
How long have you lived in Bangalore?
Three months.
Do you like it here?
Yes I do, though the weather here is unlike what I had heard. But I love the vibe of the city. It’s flamboyant yet subtle.
