Paying homage to a forgotten lineage of Nawabs from Uttar Pradesh and the lesser-known delicacies of their royal kitchens, Grand Mercure at Gopalan Mall brings to the curious palettes of namma Bengaluru “A postcard from Rampur” - an ode to the Nawabs of Rampur. La Utsav, the all-day dining restaurant of the hotel will host the food festival from the 10th to 19th of July, as a decadent dinner buffet and a curated a la carte menu Tales are that the royal estate of Rampur was established by Nawab Faizullah Khan in the 1700s. Owing to the British protection it enjoyed it soon enough became a safe haven for artists and patrons alike. By the mid 19th century Rampur rose became home to most of the royal khansamas from the Mughal and other royal courts, who unable to find work and the artistic liberties they were used to in the royal court, migrated to Rampur. The influx of culinary talent resulted in Rampur’s royal flavours being an amalgamation of other cuisines like Mughlai, Afghani, Lucknow, Kashmiri and Awadhi The royal kitchens of Rampur were also known for many experimentations, unique cooking techniques and flavour confluences. Khada or raw masalas, unusual vegetables like doodhi, lotus stem, jackfruit, figs, pineapple khus roots, dalchini and even amla all made its way into the cuisine. It is also fabled that many famous Mughlai culinary techniques like the usage of varq and tenderizing of meat with papaya & bottle gourd were born in the Rampuri kitchens.
“At Grand Mercure Bengaluru at Gopalan Mall, our focus is to bring lesser-known cuisines and their stories to limelight. A postcard from Rampur is the first chapter of this journey” says Sachin Maheshwary, General Manager. The signature delicacies from the food fest include Taar Gosht Korma, the iconic Rampuri delicacy of slow cooked lamb chunks in stock spiced with yellow chilies and saffron; Nafees Daal Shammi, an exotic daal kebab from the royal estate; Rampuri Sandali Aloo; the famed Nawabi Yakuti, Roti ka Halwa and much more.
