Introducing ‘Mash!’ by ARAKU Coffee ‘No rules’ tasting menus curated by Chef Rahul Sharma and Aditi Dugar The innovative food programme at ARAKU is set to get more playful with the introduction of more themed dinners and tasting menus. Witness Chef Rahul Sharma’s cuisine-agnostic experiments with food and Chief Advisor Aditi Dugar’s thoughtfully crafted dining experiences. ‘Mash!’ brings forth a series of hyper-seasonal tasting menus, collaborations with chefs, pop-ups across cities – experiences that showcase ARAKU is not just about great coffee! Speaking of coffee, ARAKU has a string of firsts to its credit. It’s India’s first coffee to shape the complete seed-to-cup journey. Also, the first fair-trade certified, homegrown specialty coffee to bypass any middlemen, and put forward an equitable system in the form of Arakunomics – a model endorsed by The Rockefeller Foundation’s ‘Food System Vision 2050 Prize’. The responsibly sourced food programme is a neat extension of these values. Chef Rahul seeks to maximise the use of any ingredient on the ARAKU menu. “We explore various textures and flavour possibilities of produce, and through it we extract the full potential of food,” he says. ‘Mash!’ promises a full-throttle culinary experience, bringing forward more experiments from the kitchen.

For the first edition, Aditi and Chef Rahul take inspiration from their recent visit to Paris, the home of ARAKU’s first flagship. Established in 2017, in the historic district of Le Marais, the opening marked another first Indian coffee establishing its global footprint. Fittingly, the first edition of Mash! promises an Indo-French menu. The menu, with 11 small plates, will feature classic French dishes such as Ratatouille, Coq au Vin and Crème Brûlée with a playful Indian twist, highlighting ingredients such as charred parsley butter, sake mayonnaise and raw mango kosho.

Guests can pair the experience with a selection of new age wines. Organic and biodynamic wines have long been hailed as the future. ARAKU is proud to offer a wine list that aligns with its agricultural practices and core values; wines that are produced with minimal artifice.
