Event Description

Chef Simone Loisi, Chef de Cuisine at Shangri-La Singapore’s Italian restaurant, Waterfall Ristorante Italiano, is taking over Caprese for a brief sojourn in the city from 28 April 2023 to 7 May 2023. He is from the Southern Italian region of Puglia and will showcase his signature handmade pasta and heirloom recipes that have been passed down through generations in his family. Chef Simone's culinary journey started at the age of 13, helping at his brother's restaurant. Since then, he has worked in some of the most renowned restaurants and hotels across Europe and Asia.

At Shangri-La Bengaluru, Chef Loisi's takeover will showcase a menu that exemplifies the rustic spirit of authentic Southern Italian cuisine. The set menu for lunch and dinner will feature the Burrata Pugliese, Spaghetti Alle Vongole, Penne All Assassina, Funghi E Capesante, Linguine Allo Scoglio, Panna Cotta Con Sciroppo Di Amarene and Crostata Al Pistachio. The specials on the menu will include the Calamari Scottati Su Purea Di Ceci E Rosmarino and Cavatelli Ragu Di Agnello E Porcini and shareable dishes like the Pollo Girarrosto Al Rosmarino E Limone and Branzino in Crosta Di Sale. There will also be a selection of Romana-style high-hydration dough pizzas such as Bufalina, Verdure, and Siciliana.

Chef Loisi’s special menu will be available for lunch and dinner at a starting price of INR 2500 plus taxes per person.
