Chef Bernadine Fernandes is the visiting chef from Goa. Chef Bernadine Fernandes is at JW Marriott for a Goan Food Festival. In conversation with Explocity, she talks about her passion for Goan cuisine.
I grew up in Nagoa, a small village in Goa
Since my childhood I was always passionate about cooking and experimenting with new dishes. My love for cooking has been my driving factor to become a chef.
I have been a chef for 15 years in Taj Exotica Goa. And, post that I retired. But, that has never stopped me from practicing my passion.
I enjoy both actually. Cooking is fun, when we can create new dishes with the locally available ingredients.
I strongly believe we should preserve the authenticity of the Goan cuisine that is what makes this cuisine so unique.
I love Pork Vindaloo- a Goan dish. And, it’s a must try for you too.
There’s no particular dish that I dislike as such. But I am not a great fan of sweets.
I haven’t been in Bengaluru for a long time. It’s my second visit to Bengaluru. In total maybe four days and I already love this place.
I am loving my stay in Bengaluru. Especially JW Marriott Bengaluru has a great team of chefs and associates. It is indeed a great place for me. And, I am looking forward to create and cook delicious dishes from Goan Cuisine, in the 10 day long Goan Food Festival.
