The Algerian Merguez Sausage

Merguez is a sausage made with uncooked lamb or beer with a lamb’s intestine casing. It’s spiced with cumin, garlic, chilli, pepper and harissa. It’s quite red in colour because of the ingredients.

The sausage is an Algerian dish, popular in North Africa, Middle East and even France. It is grilled and eaten with tagines giving it the North African authenticity stamp.
