The Quite Mature Andouille Sausage

Andouille sausage is a grey pork sausage. Andouille pronounced “aan-do-ee” is also the French word for imbecile. But the sausage on the other hand is far from an imbecile. The sausage while being French travelled to the US with French immigrants as well as Acadians to form the Cajun cuisine of Louisiana.

The smoked sausage is made from pork shoulder, pepper, garlic, pork intestines, tripe and wine. While the pork is smoked, the sausage is smoked again after casing. The casing is also all natural, which is why you may not find it as smooth as other sausages.

The Andouille sausage originated in Brittany and was popularised by its use in Cajun and Creole cooking. Especially in a delicious Jambalaya or Gumbo.
