Corporate Executive Chef Padmanabhan Anand at Banjara Melting Pot thinks it’s hard to pick a favourite dish. Just like a mother can’t pick a favourite child. In conversation with Explocity, he talks of his journey in being a chef.
My childhood days were in Kerala where my father was working with the Kerala Government. Childhood and college days brings a lot of sweet memories and also a lot of food memories as every part of Kerala the cuisine is unique and different. I have been fortunate to live in 12 out of 14 districts in Kerala.
Let me be honest- It was a momentary decision. During childhood days my Appa wanted me to be an Engineer and so did I. But yes, things changed after my 12th. Though I cleared Engineering entrance, I could not join as I was below the prescribed cut off marks. I took up Hotel Management as it was a professional course and Front Office was my favourite department due to my flair for guest interaction. It was during my Industrial Training my perception changed about chefs and that was the time I decided and discovered the chef in me. From that time there wasn’t looking back.
It has been 23 years in the industry and even today I enjoy every moment.
A chef is an innovative artist - Cooking is a regular process and creating is an ongoing process which makes you stand out. I do both.
Yes there always is. A cuisine is the signature of a generation or a culture. It’s their creativity and surely needs to be preserved.
Honestly I have tried almost all cuisines across the globe. During my recent Europe tour, I got to taste varied cuisines and also signature dishes of renowned chefs. The dishes I like the most is, of course, my mother’s food. I miss it a lot and every possible chance I would love to savor it.
Any dish has its individuality. Like a mother cant say which child she likes the most or dislikes I won't be able to tell any dish as my least favourite.
This is my second innings in Bangalore & it’s been close to a year now.
Bangalore has changed over time and now has got crowded. But yes this city had something special that keeps everyone happy and going. I also am one among them.
