Chef Brian Moore is a true Australian. He loved BBQ and surfing. Chef Brian is visiting JW Bangalore from JW Phuket. His favourite cuisines are true to his heritage, he likes a good BBQ, and Thai, where he currently resides. In conversation with Explocity.
Where did you grow up?
I was born and brought up in Melbourne, Australia.
What led you to becoming a chef?
I had a passion and interest in cooking from around the age of 10-12 years old, was fascinated with food very young in life.
How long have you been a chef?
I started cooking professionally at the age of 15 in 1989 so it’s been 30 amazing years so far.
What do you enjoy more? Cooking or creating?
Interesting question! I love cooking so much and I believe cooking is at the same time creating because a lot of dishes evolve in the kitchen when cooking them.
Do you feel there is virtue in preserving the authenticity of cuisine?
Yes, I strongly believe you should stay true and authentic to a cuisine, you can apply modern cooking techniques and presentation but the foundation of the dish should be authentic to the region or culture of that particular dish.
What dish do you like eating the most?
I love so many types of foods from so many different countries. I am Australian so I love a good BBQ I also love Thai food, French, Spanish, Italian both eating and cooking.
What’s your least favourite dish?
I actually don’t eat eggs I really do not like the taste or texture, mixed in pastry items and pasta etc. ok but a plain boiled or fried egg just isn’t for me.
How long have you been in Bangalore?
I just arrived on the 8th of July 2019 for a two week promotion with our sister JW Marriott property.
Do you like it here?
I am sure I will love it, once I get a chance to explore this amazing city. I have always had a fascination to travel to India, this is my first time here. I also love Indian cuisine so I am really looking forward to savour the local cuisine here.
