Chef Varun Pereira is the Executive Chef at Sly Granny. Working in the US, Chef Pereira grew in the ranks in the food industry, from dishwasher to Executive Chef. Having a strong mentor in his father has taught Chef Varun Pereira be the self made man he is today. In conversation with Explocity, he says that he has many father figures in his family. Father's Day is celebrating the people because of whom I am where I am today. It's not only my father but anyone who has played the role of a mentor or father figure. In my life I have been lucky to have a few such people. The most important being my father. Apart from him I also have my grandfather, grand uncle, uncle, and a few elder cousins.
I grew up in the capital city of New Delhi India.
An accident. Studying in college in the States I had to find a source of pocket money. The easiest option was to get into the food service industry. I entered as a dishwasher and worked there for a year. During this time I pestered the head chef to give me a shot at the kitchen as that would mean a higher salary. Once I got my foot in there was no looking back and I realised that this was my calling.
I have been working in the food production industry since October 2000.
Both go hand in hand. In order to create something I must cook it so to me both play equal importance and I enjoy them both.
Yes I do I feel that upto a point. It's very important for us to remember our roots and where we came from in terms of food. But it's also equally important to change and evolve with the changing times.
Anything home cooked by my mother. Rajma Chawal, Mutton Curry, Channa Dal to name a few.
I don't have a least favourite dish. All food is good; some I prefer more than others. But food sustains us so I eat everything. That's what my family has taught me.
I have been living in Bangalore since the end of 2005.

Yes I have grown very fond of this city. I love the laid back chilled out approach. It works well for me.
