The Andalusian Chicharron

Chicharron is a dish from Andalusia in Spain. It is a fried pork belly or the rind. There are beef, chicken and mutton variations too. Basically anything with a belly or rind that can be fried.

It is not a dish by itself but is usually eaten with a taco and some salsa verde.

The dish is eaten in most of the Spanish speaking world in one form or another.
