The Very Very North Indian Brunch At Vapour Bangalore

Bangalore has been pulled and stretched in all directions. Sarjapur is one of the areas that has grown into the city now. And maintained a little bit of the Bangalore feel to it. Perched on top of the Reliance building in Sarjapur is Vapour Bangalore. And we do mean perched. Or at least it feels that way. From the terrace you can see two of the city’s lakes. And none of those fire catching lakes.

The area feels like it has a big migrant population. Restaurants named Purani Dilli and The Northern Central give a little away. But while Vapour, the popular microbrewery, may not be a name foretelling of a cuisine, the North Indian food is pretty damn good.

The Sunday Brunch brings the best of North Indian cuisine. A live Chaat Counter has a chef from Delhi (did look a little like Popeye) making a Palak (spinach) Chaat, a delicacy from Delhi.

Chaat is a good way to start and end a meal. The flavours act as an appetiser, palette cleanser and digestive. Especially Pani Puri. It’s served with four flavours of water- mango, orange, mint and regular.

The many food counters weave in and out of the restaurant, into the terrace seating. The cuisine weaves with the counters. There is a salad counter, antipasti, waffles for kids, and entrees like Eggplant Parmesan and Grilled Fish in Lemon Butter.

But the Amritsari fish was moist and flavourful.

Wheat Romali Rotis pair with chicken or Mutton Rahra. Another typical North Indian dish, the Rahra is like a Gosht. It comes from Himachal and made with special spices.

The pride of every North Indian chef is the Dal Makhani. “We do not get any authentic Dal Makhani in Bangalore,” Sanjay Panwar, Vice President of Vapour Bangalore told Explocity, “that’s why the brunch has tried to focus on dishes that are not easy to get here.”

Chole Bhatura is not something featured on many brunch menus but Vapour in Sarjapur has a counter frying hot and ballooned up Bhaturas.

Even the dessert is Jalebi and Rabri. The Jalebi being made with apple pulp.

Vapour Pub and Brewery has craft beer that complements the cuisine. The brunch is packaged with IMFL liquor, beer, or cocktails and mocktails.
