Chef Selvaraju Brings Mewar Cuisine to Bangalore

Café Mozaic, the multi cuisine all day restaurant at Vivanta by Taj MG Road has a special menu bringing to us the locales of Rajasthan and the Mewar region. Inspired by the rugged topography of Rajasthan, Mewar cuisine is a blend of both, the war like lifestyles of its inhabitants and the availability of ingredients in the region.

Reflecting the colours and opulence of the cuisine, Ramasamy Selvaraju, Executive Chef has designed the menu. “Changing and enhancing the menus is a continuous process. And amalgamating the freshest available ingredients of the season is how emerging cuisine trends occur,” Chef told Explocity in an interview.

The menu features grills like Maas ka suley, Murgh ka mukkul, Mewari gaj ke kebab, Bhuttey aur zeera ki tikki, Sigri paneer tikka. The mains are Maas ke soyata, Goliya (Mutton cooked in clay pot), Dal Bati Churma, Murgh ki Soyata and Sangri (a type of dried wild bean) ki koftey. Guests can enjoy drinks like chaas and Raabs. It is all served with unique flatbreads like Bajrey ki roti, Makkai ki roti and Bejad ki roti.

The Mewar cuisine is spicy and makes use of many interesting ingredients in ways one cannot imagine. Like Gatte ki Sabzi is made of Besan. The landscape of this area is arid and this has inspired the cuisine to be creative with the ingredients. Milk and ghee are used instead of water and this makes the cuisine rich; fit for royalty.
