Erudite Epicure

Haggis is the national dish of Scotland. It is a pudding made of the innards of the sheep. The heart, liver and lungs of the sheep are minced with beef or mutton suet. This is mixed with oatmeal and seasoned with onions, cayenne pepper and other spices for flavour. Haggis is made when this mixture is stuffed into the sheep’s stomach and then boiled.
