Terrine
This is as French as it gets. A terrine is basically a French meatloaf, made with more coarsely chopped ingredients.Terrines can be made of minced meat such as game or poultry, or seafood or vegetables. The mixture is packed into a rectangular dish and cooked in a bain-marie which is a water bath and never on direct heat. Terrines are usually served cold or at room temperature. Sweet terrines can also be made from fruit.
