Shoofly Pie

This is an Amish dish from the Pennsylvania Dutch community who are known for their handmade delicacies. There are many varieties of this pie, but the most common or standard version is akin to a rich coffee cake, with a sticky molasses bottom. It is usually served with whipped cream. There are many stories about the unusual name, but the most commonly held theory is that the sugary pies cooling in the windows attracted a fair amount of unwelcome flies.
