The Picador Cake, and the Flourless Hot Chocolate Soufflé.
What inspired you to take up cooking?
A couple of things including the opportunity to create something memorable and impressive from a few simple ingredients, and the passion and dedication exhibited by chefs who were my teachers.
What has been your most memorable moment as a chef?
The moment when I realised the dream of running my own bakery after many years of hard work was memorable.
