Chef Abdul Ghani
Guest chef at Lalit Ashok
How long have you been a chef?
I have been a chef for the last 22 years.
What are your signature dishes?
Konafa, baklawa, dijaj saloni and quozi.
Who or what inspired you to take up cooking?
It’s hereditary because my whole family is into cooking. We have owned restaurants for generations.
What has been your most memorable moment or biggest achievement as a chef?
My most memorable moment was when my mom tasted something I had created at the age of 18 on my own. And the biggest achievement was when my entire family appreciated it and certified me as a chef. The dishes I made were kibbeh and keshkeh with a different twist.
What kind of food do you personally enjoy eating?
I personally enjoy eating Indian food such as dal, naan and rabri when it comes to sweets.
Why do you think there aren't many women chef around?
Who says there aren’t any? My wife is a chef. But logically speaking there aren’t many lady chefs in India because they prefer cooking for a small family rather than commercially. But I suppose its picking up now and many Indian lady chefs are coming forward to experience it.
