The Irish love their cabbage and it’s in all their courses (hopefully, not dessert.) Colcannon is one such dish that is actually a side dish of mashed potatoes but it has cabbage too. Colcannon literally means “white headed cabbage”!
If not cabbage, kale can be used too. Traditionally the dish is made from mashed potatoes, cabbage or kale, milk, butter, salt and pepper. Leeks, onions, scallions and chives can be added to it too.
The side dish is eaten on the side of Irish bacon or ham. The dish is eaten year round as a staple, mainly for how cheap it is. Including St Patrick’s Day.
